I had known about it long before the first candle was ever lit.

As Downtown Director, I am often entrusted with secrets before they become stories – whispers of what’s to come, of dreams not yet unveiled. And this one… this one lingered with me. For six months or more, I carried the quiet anticipation of Host Romeo, waiting – sometimes patiently, often not – for the moment it would finally open its doors to the world.

The Night It Began

On March 5th, it did.

And I, unable to resist the pull of something I had already fallen halfway in love with, made a reservation at once. That Friday evening, beneath the soft hush of celebration and candlelight, I arrived to mark my birthday. But what unfolded that night was far more than a celebration, it was a kind of enchantment. To call it “wonderful” would be to miss the poetry of it entirely.

The Art of Hospitality

From the very first greeting, there was an elegance in the air. The staff moved with a quiet confidence, each one carefully chosen, exquisitely trained, true stewards of hospitality. I was reminded of my roots in New Orleans, where service is not merely a profession, but an art form, a rhythm woven into daily life. It is the thing I have missed most since leaving. And yet, somehow, I found it again here. At Host Romeo, the service is not just impeccable, it is heartfelt. Warm. Attentive in a way that feels almost intuitive. They do not simply serve you; they see you. And in that, they make the evening unforgettable.

A Menu Like a Love Letter

Then came the menu; a love letter in itself. From its artfully designed cover to the final farewell printed at its close, it reads like a story waiting to be savored. Executive Chef Jessica Phillips has composed something extraordinary: a collection of dishes that delight both the eye and the soul. Each plate arrives like a small masterpiece, each bite a quiet revelation. The Shrimp and Crabmeat wontons –  oh, the wontons – have forever altered my expectations; nothing will ever quite compare again. And the Chili Honey Shrimp, sweet and savory in perfect harmony, shimmered like something conjured from a dream. Locally sourced honey and peach preserves whisper downtown Romeo’s name “Return to Romeo”.  We ordered four dishes, unable to choose, unwilling to miss a single note of the experience, and I would do it again without hesitation.

 

A Setting from a Fairytale

And the setting… It was nothing short of a fairytale.

Above the dining room floated a living botanical chandelier, suspended as if by magic. Its fragrance lingered just at the edge of perception, delicate and intoxicating. The entire space felt alive, glowing softly with romance. For a fleeting evening, I was no longer simply a guest, I was something closer to a princess in a storybook world. Even the restrooms carried their own charm: gold swan faucets, soft dancing lights, a sea of blush tones that made me pause, if only to take it all in.

A Dessert to Remember

And then – dessert.

The molasses cheesecake.

There are moments in life that feel almost sacred, and this was one of them. It was divine, truly, like something heaven itself might offer. Reminiscent of a holiday tradition.  Rich, delicate, unforgettable. I suspect I am forever ruined for all other cheesecakes.

A Toast to Something Special

As the evening drew to a close, and word of my birthday quietly made its way through the room, two delicate globe glasses appeared, filled with effervescent bubbles that shimmered in the candlelight. We toasted. I made a wish, though in truth, it felt more like a thank you. A thank you for this place, this experience, this unexpected magic brought into the heart of our town.

And as I blew out the candle, I realized –

Some things are worth the wait.
